Chicken with Shallots and Garlic
No Thanksgiving dinner for us today, but we will enjoy this easy comfort dish!
I’ve been focused lately on entertaining at home, and about gathering in more meaningful ways, with intent, and grateful for each other, and for living in peace. It’s American Thanksgiving today and while I have come to love Canadian Thanksgiving as my holiday, I miss going home to Vermont to visit my family for a weekend of activities mostly centred around preparing dinner and conversation around the table.
I used to load the girls and dog into the car, we brought along some craft activities to do together with “the cousins” like making holiday decorations, beading, and gluing things together. We always made some sort of table arrangement for my mom’s dinner table by gathering some branches, herbs and bittersweet (I know - such a terrible invasive plant). We all had a job or two to get ready for the main Thursday evening dinner. I loved it.
I won’t be making a turkey today, most likely it will be a last minute pull together of what is in the fridge after playing pickleball. One thing I do have in my tool box is a comforting cold weather dish that is easy to make and great for company - and it’s perfect to make in advance and have on hand for either a group of friends or leftovers when you don’t have time. It’s a French “bistro-esque” inspired chicken dish with garlic, shallots, salt and a few tomatoes. That’s it. Easy, delicious.
