Am I sounding like a broken record? I love squash. I love brussel sprouts. But I promise this will be the last recipe for them this year. This recipe couldn’t be easier, it can be made in advance and reheated, just allow time for roasting the vegetables. I call it a salad but it’s really a side dish. You could tuck greens underneath the prepared vegetables and squeeze lemon juice and olive oil on top for a more traditional salad feel.
